Why Magnesium Is Often Lacking
Modern diets and agricultural practices contribute to magnesium deficiency. Magnesium is rarely replenished in soils and is lost during food processing and cooking. For example, refined white sugar loses nearly all its magnesium during production, and up to 96% of the magnesium in wheat is removed during the refining of white flour. Magnesium is not added back into enriched flour, and foods like fats, oils, and meats provide little to none.
Cooking vegetables in water can also leach out up to half of their magnesium content. Diets high in dairy and low in whole foods further increase the need for magnesium, as dairy contains about ten times more calcium than magnesium.
